Storing Dalmatian Ham and pancetta

Hi,

I have just come back from Croatia with a vacuum packed block of Dalmatian ham (like Parma ham) and a block of pancetta also vacuum packed. They both have a date till end of December.

Obviously I don't want to eat all this in one go. How would I store it once opened? Would I just wrap it in grease proof paper and keep it in the fridge?

    I think you will find that if you store it carefully it will keep well beyond the end December Best By date. With vacuum packed stuff like this, it's important to keep the air out once the pack has been opened. We use those Press Seal bags which you can get from various hardware shops. Put the product back in, squeeze/press the bag to get all the air out and then press the little seal to close the bag and keep it airtight. Store in the Dairy compartment of the fridge if you have one until needed again.
