meal ideas

hello

I need some ideas for meals.

Thing is they need to be healthy because my husbands cholesterol is a bit high, but also easy (quick) to prepare or can be done up to 6 days in advance as I have a very demanding 7 month old baby who does not let me spend more than a few minutes in the kitchen.

Help!!
Mummy to two girls, 4 & 1, been at home for four years, struggling to contend with the terrifying thought of returning to work.

  • How about sweet and sour chicken. I cut up mini chicken fillets, put them in a bag containing seasoned plain flour (I put salt, black pepper and a pinch of dried ginger in mine) and shake to coat. Chop a couple of garlic cloves and fry with chopped onion and a couple of chopped peppers (you can use olive oil or spray oil for this), add the chicken and stir well. Cook for about five minutes to brown the meat on all sides. Add 2tbsps of tomato puree, 2tbsps vinegar, 2tbsps soy sauce, tin of pineapple chunks in juice and 1tbsp sugar. Stir well and bring to boil then simmer for about 15 mins until chicken is cooked. I serve with the microwave rice, Asda's own brand, that you cook for two mins and there's enough in one pouch for two people.
  • Quorn mince is great...quick and easy to cook, low in fat, cheaper than normal mince. It's on bogof in tesco at the moment. Can't fault it.

    Batch cook it with chopped tomatoes, onion, garlic and some veggies. Freeze in containers for when you haven't got much time

    Add chilli flakes and kidney beans for chilli
    Serve on spaghetti for spag bol
    Mix with carrots, peas and a bit of gravy and top with mash (can also be batch cooked and frozen easily) for shephards pie
