home made birthday cake

This isn't my usual name but I am having a problem logging in...
I am making a home made castle cake for dd's birthday on Sunday and I need to know how soon I can bake the cake and ice it....
Its going to be a normal sponge cake with.... (hangs head in shame).... ready made Betty crocker icing on it

How about making it in a square tin. Maybe 2 square tins and then using the second one to cut up for the towers. - Sandwich them onto the corners using jam/buttercream.
An entrance door could be make using something similar to 'matchmakers' and maybe the same for some ramparts on the top- haven't really thought it through but maybe somebody else could be more specific.

Normal Victoria sponge with butter in it, or fatless sponge cake? The first will keep from now till Sunday no bother if kept in an airtight tin or wrapped in clingfilm, the second you'd be better baking on Saturday.
I would ice the cake the day before the party. Less stress for you and if you mess it up you've still got time to run out to Tesco and buy one. (Ask me how I know this....) Any further in advance and the BC icing may slump. Keep it somewhere cool after icing it. Away from the cats. I took DD's cake to the party last year and found a little kitten paw-print on one side.....Val.0 -
I just wanted to let you know that the cake went well.... I made the layers on Thursday and iced it on Saturday night. It didn't come out like the one on the youtube video that I used
But it worked well.
