How long does cake mixture last?

Im making alarge number of cakes for my school fete. Id say around 200 fairy cakes
Can I make the mixture up in one lot or will it loose its raising agents as I can only bake 36 at a time
Or would I be better making each lot from scratch?

Make each lot from scratch, it will loose it's oomph. Might be a bit time consuming though, can you not do traybakes, which will be less fiddly for icing etc? There is a good traybake list here somewhere

I meant make the fairycake/ sponge mix, but cook it in a traybake and slice it up a la MR Kipling - the thread has some good ideas for amending a sponge, like lemon or chos chip etc. I thought if it was me I'd be inclined to do at least half that way for time, storage and transporting.
When is it for? The other option is that you ccan make the cakes and frezze them, then ice them when they're defrosted. Also, if you make a roll out/fondant type icing you could simply roll it out and cut out circles to stick on top!
Another idea is that you could have the kids decorate them on the day, a sort of Ice Your Own Cake stall, and charge them 50p per cake or something like that.
