Turkey (frozen)

I have someone coming for a meal on Friday & have a large frozen turkey portion in the freezer - enough for the 3 of us.

I have my own carrots, onions & potatoes that I can use - & salad.

Any suggestions for a nice way to cook the turkey?

I'm that skint I don't want to go out & buy anything special.

Oh - and I plan to make a crumble out of the wind fall apples!

I have some left over from the courgette & apple chutney I made this afternoon - so am feeling a little smug so far, but would appreciated any suggestions that don't involve curry as the guest doesn't like that.

    Can tell us if the turkey portion is breast or leg meat and if whether or not it's cooked or raw as it would help us to come up with better ideas.

    If it's leg, it will braise nicely in a red wine based stock (it would probably braise nicely in any stock, but that's the one I've used before). If it's a boneless joint of some type you could stuff it (or cut it, stuff it and string it up again) and roast. If it's breast I'd roast it - with butter or oil, with bacon on top to keep it moist, on a bed of lemon, thyme and onion - or whatever combination of nice tasty things you like. If you roasted it more plainly, or poached it, you could cool it and chop up and serve with a mayo/cream/yoghurt dressing, maybe with some halved grapes, or serve plainly except for your lovely chutney and salad

    It's raw -a leg & a wing I think.
    You get them out of Morrisson's very cheaply - about £2 for a pack & there's loads.
    The red wine stock sounds good, but I don't have any - I do have some home made white wine. I also have some cider - would that do do you think. I do use cider in pork sometimes?
    I'll keep the chutney until X mas - It takes a while to mature, but I have some from last year.
    Sorry to be a pest.
    Not used to guests being in the caravan.
