When to make a cake?

I'm planning to make a carrot cake for my partner's birthday on Sunday. The problem is when to do it. If I make it on friday it will possibly be dry by Sunday. But if I make it on Saturday he's bound to see! What would you guys recommend?
a) bake friday and wrap in foil
b) bake friday and freeze until sunday (will it seem less fresh then?) and will he spot it in freezer?!
c) bake saturday and let him see me doing it
d) bake it together and not have the surprise element at all!
How do 'normal' people bake cakes for their husbands?!

bake it Friday and wrap in silicone paper and keep in a cake tin untill sunday0

Like ladygrey, i would bake it on Friday and store it well wrapped, but i would ice it on the Sunday morning to keep the icing nice and fresh.0

Wow! thanks for the unanimous advice you two! I knew mse would come up trumps! Now I have to think of a moneysaving way to acquire a cake tin!lol
I will definitely leave the icing as you say, especially because it involves mascarpone and would definitely be past its best by Sunday I think.0 -
Another quick query! Could I wrap with greaseproof paper or is this not the same as silicone paper/baking parchment?0
