defrosted veg

oh unplugged the freezer by "mistake" it was in the garage so didn't notice until too late, some of the food I've cooked, some I've had to throw away but was wondering if I can re freeze frozen veg that has defrosted?:o

I think that, as long as they were still kept cool, they should be safe enough to refreeze. Though I'm not 100% sure how they'll turn out when they're eventually cooked - some veggies have a tendency to go a bit floppy!
personally, I think I'd try refreezing it, then once it's frozen, try cooking up a handful, see how it turns out. You're not really losing anything that way I guess (other than 5 minutes) if it doesn't work.0 -

the only thing I would be careful with is part cooked rice and any veg (like parsnips or potatoes) that I'd parboiled then covered in fat/oil ready for roasting.
you might want to try to flatten out any packs that have squashed up together in case it's difficult to take out individual portions, if they ice up as a solid mass
I once found a packet of peas and another of sweetcorn in the cupboard, instead of the freezer, when my daughter 'put away' the shopping0 -
used some today and they were fine
