    You can make an easy pomegranate sorbet.

    Mix pomegranate juice and sugar in a mix of 3:1, so 3 cups of pomegranate juice to 1 cup of sugar, these are rough measurements so there's a bit of leeway if you want to use less sugar. You will find pomegranate juice alongside all the regular fruit juices in supermarkets.

    Mix them together until the sugar's completely dissolved (feel free to warm it in a pan if you think this will make that easier).

    Chill, then place in a big sealed tub in the freezer. Freeze for at least overnight.

    Simply scrape the sorbet out to serve.

    I guess this would work equally well with other flavours, why not seek out pineapple and coconut for example.
  • That joghurt and whipped cream combo is god-like. I often halve raspberries or strawberries and mash the over-ripe ones into the mixture. This works well with bananas as well. You could chuck in some of those dry sponge fingers which you use for trifle, broken up into the mixture too: they're nice if you dribble over some framboise, creme de cassis or fruit-syrup: you know, the stuff you can add to sparkling white wine Mmmmmmmmm! I'm peckish now
  • Lemon Posset is one of my favourites, it's very simple to make and only has three ingredients but really needs individual serving glasses so not sure if this is feasible for 11.

    Lots of recipes for it are online.

    another sorbet idea is watermelon - they are cheap and flavoursome this time of year. its a bit of a pain getting all the seeds out - but worth it for the lovely delicate flavour (and if serving adults add some fizzy white wine)

    A quick and easy fail safe pud that we all like is this one.

    Take a couple of chocolate flavoured swiss rolls with jam in the middle. Slice thinly and lay in the bottom of a shallow squarish or rectangular dish. Sprinkle a couple of tablespoons of sherry, or wine, or something similar depending on taste, and let it absord into the sponge. Then spoon blackcurrant pie filling over it. Whip up some cream and then spoon this over the top, ruffling it up into peaks so it looks pretty. Then take a couple of cadburys flakes and break them up into longish shards, then sprinkle these over the top to add a little texture. You can grate chocolate if you prefer but the texture of the chocolate flakes helps I think. Then just chill in the fridge until you are ready. It is quite rich, so you only need a little bit, unless you are greedy (like me!!!)

    Another vote for Eton Mess. The only problem is that you will never make enough of it.

    ETON MESS

    Serves 2

    INGREDIENTS

    450g of fresh strawberries
    1 tablespoon of sugar
    250g of meringue
    250ml of cream

    METHOD

    Wash the strawberries, remove any stalks and chop them into quarters. Break or chop the meringue into rough 2cm (1 inch) pieces.

    Put the strawberries in a bowl. Sprinkle over the sugar. Mix together.

    Pour the cream into another bowl. Lightly whip the cream. Don’t over-do it: it should still be pourable.
    Add the strawberries to the cream, or vice versa. Add the meringue pieces. Mix together and serve.

    ADDITIONS & ALTERNATIVES

    Use ready-made meringue, especially if it’s broken and reduced in price.

    If you make your own meringue, this is the dish to practice with. If they weep, crack or even collapse, you can still use them in this. However, you do have to make it a day in advance.

    For the romantic version, top with a large strawberry and offer this to your partner.

    An authentic Eton mess uses strawberries, but other summer fruits work well.

    However, even Heston Blumenthal has had to concede that Eton mess is "quite simply impossible to improve upon".

    HISTORICAL NOTES

    Eton mess originated at Eton College in the 1930’s, when a mixture of either strawberries or bananas with cream or ice cream, all stirred together (hence the name "mess"), was served in the school’s "sock shop" (tuck shop). One anecdotal story is that the dessert was ‘invented’ by a Labrador dog, when it sat on a picnic basket in the back of a car. With the later addition of the meringue, it has evolved into the unashamedly wicked, yet still quintessentially English, summer dessert. It is traditionally served at Eton College's annual prize-giving celebration picnic on what is still called the "Fourth of June", despite actually taking place on the last Wednesday in May.
    The acquisition of wealth is no longer the driving force in my life. :)
  • I know it will be to late, but I just remembered this recipe that my mum used to make, and it easy, tasty and can be done cheaply if you have a glut of apples! I cant remember the exact quantities I am afraid - sorry

    Swiss Toffee Apple

    Fill a glass trifle style bowl with pureed apple/apple sauce (sweetened to taste if need be)
    Add a layer of whipped cream (as much or as little as you fancy, I like a lot!)
    Then top with cornflakes that have been mixed in with sugar, butter and a wee bit of golden syrup (melted together over a low heat until the sugar has dissolved)
    Leave to cool and enjoy!! :T

    I like even better the next day when the cornflakes have gone a wee bit soggy - yum!!

    Lemon Possett is my fave too. I sometimes make the possett and fill a pastry case if it is for a lot of people, rather than individual pots

    I know im late in replying to this thread but i thought i would add my fave cold dessert :)

    I love making individual desserts, so i buy brandy baskets and put fruit compot in the bottom, then cold custard and topped with fresh berries, on the side of the plate i put one scoop of ice cream - yummy, im craving this now lol
