hi can anyone give advice to rescue curdled mayonnaise. don't know what i did wrong. also anyone any ideas for the egg whites. many thanks in advance.

Hmmm, did you add the oil quickly? I think that makes it curdle but never made it myself. Let me look for thread for you.....

Delia saysMayonnaise only curdles when you add the oil too quickly at the beginning. If that happens, don't despair. All you need to do is put a fresh egg yolk into a clean basin, add the curdled mixture to it (drop by drop), then continue adding the rest of the oil as though nothing had happened.

And meringues are the thing to do with the egg whites. They keep for ages in an airtight tin. Or you can freeze the whites but don't forget to label the container with the amount of whites.0 -

I made the delia recipe last week for the first time in my kitcheaid. I thought I needed to run the machine slow but on flicking through the the kitchenaid cook book as I was making it I found you should run it on the highest speed whilst adding the oil drip by drip.
I had a great result, except I added too much lemon a bit tangy.0 -

You could try adding about 3tbsp of hotwater and then whisking the mayonnaise again.

well tried again but was still runny although better than last time. i will try again another time whisking faster as suggested by bootman. many thanks again.0

For future ref, although mosts mayo recipies just use egg yolk, you can do it just as easily with a whole egg - 1 egg into a blender, add upto a pint of oil drop by drop until it gets thick, then a splash of vinegar, bit of mustard or whatever you fancy adding to flavour it. Enjoy!0
