Your favourite elastic chicken recipies please!

Hi
Don't buy chicken often, but have a nice free range one from aldi and want to make the most of it!
Need 5 adult portions per meal.
My "default" slightly elastic chicken is:
Roast dinner one night and slow cooker carcass soup the next,
I'm sure I could get at least a 3rd meal out of it surely.
I have lots of veg and pulses in the stoor cupboard. Family will eat pretty much anythinng.
What would you do?
Don't buy chicken often, but have a nice free range one from aldi and want to make the most of it!
