Hello folks.
I bought this book a few weeks ago and can't stop baking things from it! I haven't tried the carrot cake you said went horribly wrong but:
American Vanilla cupcakes (courgette)
Chocolate brownies (beetroot)
Chocolate cupcakes (carrot)
Coconut cake (courgette)
Were all amazingly, brilliantly delicious!
Admittedly, they take longer than whipping up a quick sponge, but I like to think that with all that whisking I'm getting a bit of a workout. And the cakes are fat free too!
I think it's unfair to say that Harry is gimmicky and doesn't test the recipes. They are all painstakingly tested - and she does say at the start that you should really use the right tins.
All in all, I think this book is BRILLIANT! A great way of using up stuff from our veggy box, and the cakes are delicious - the brownies were better than Jamie Oliver ones I have made in the past, which contain twice as much sugar and a whole packet of butter. They're not like normal "healthy recipes" which taste gross, loads of the things taste better than their fatty equivalents.
So, that's that. Rant over! Now, I think I might go and help myself to another cupcake....well, it is added fat free!0 -

Thanks JLS202 for a different view. The thing is that I have 8 mouths to feed so really don't have the time to be faffing with all the grating if the result's not guaranteed...I would give something else a go but the writing style has got me so wound up I don't think I can. I have a large array of tins (like most osers) and am not going to buy new ones that are an inch different for one cake that might then work. Sadly my kenwood does the work so no extra muscles for me either! It seemed a nice idea but not for me in the end - I have mass catering to do.0
