Chop them up into chunks, add some chopped (red for colour?) onions and some cooked pasta (maybe tricolor if you have some), mix with the yogurt/mayo then sprinkle with some chopped chives for a chicken pasta salad. Could also be served with a jacket potato for something more substantial.

like olliebeaks suggestion - mine is a version of coronation chicken - cut chicken into chunks, just add enough yogurt to make it a bit sloppy then a teaspoon of curry powder salt and pepper and serve with salad or chips or new potatos cold or you could still use chicken in a curry sauce if you wanted it hot - the yogurt wont harm it one bit! might cool the curry down a bit so i would used a hotter one than normal!

I think you did the right thing by putting them in something moist - mayo would be another option & mix with onion, carrot & cabbage to make chicken coleslaw
  • thanku both for suggestions.. both sound lovely... and hello again tandraig...xxx

hi princess lou - you got good instincts there to cover them with something moist. they have marinaded nicely now! if you had added a flavouring to the yogurt (curry, bbq) you wouldnt have needed to do anything else to them today - just serve and enjoy!!!!!!!!!!!!!!!!!!!
  • I agree that you have done the right thing with the yoghurt
I always poach frozen fillets in stock or just water because they do have the tendency to be dry.
Blessed are the cracked for they are the ones that let in the light

me too butterfly - but we live and learn these things the hard way!! lol i tend to use frozen fillets only in dishes that are cooked in the sauce. dont buy them often cos i usally accumulate enough home cooked chicken in freezer - but they are ok as an emergency stand by.

my favourite for dried chicken (or any meat) is to make a sweet and sour sauce and drown the meat in it lol..comfort food or a main meal with pasta :D
    'Normal' is a dryer setting.
