cake on the bottom - crumble on the top???

Hi there,

had something a while ago and would like to give it a go.

Was a sweet tray bake type thing that was cakey or bready on the bottom with fruit filling and like a sugary crumble type effort on the top.

Any ideas???

  • Is it a crumble cake? There's plenty of recipes here.
    I've never made one so couldn't advise on a good recipe.

    I make an apple crumble cake which is delish. I use half the recipe for a Victoria sponge in the bottom of a deep cake tin then layer some sliced apples on top and sprinkle with sugar. Then make up a crumble topping but use a bit more butter than usual ie instead of 6 oz flour, 3 oz butter and two oz sugar I use at least 3 1/2 oz butter, sometimes even 4 oz if I'm feeling wicked.

    It takes up to an hour to cook in the oven depending on the size of the cake tin, so do it when you've got something else in. You may need to put some foil over the top. Very important to test with a skewer.

    This goes down well in lunchboxes
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!
