Lunch menu - need help

I knew exactly where to come when asked to cook a lunch menu for 7 friends. It is to celebrate my sisters upcoming wedding so would love it to be special.
Would love your ideas on how to make it special and fantastic lunch menus you know are foolproof.
Something that I can freeze before hand would be even more perfect!

I'd be tempted to make it on the diet friendly side if its for a wedding, many find they pay more attention in the run up, than normal to weight (getitng into that dress) and yet there are more celebratory meals with family/friends etc.
But the weather is cold.
I'd be tempted to look at a soup starter, easy, and quick to add it a toothpicked swirl of yogurt or cream to serve. And as autmun feel so upon us I'd be tempted to look to those flavours now. Maybe chicken wrapped in a little pancetta served with butternut mash (you can serve it piped or in a ring to make a neat circle) with sweet baby brussel srouts, or buttered cabbage and chestnuts? Or, sticking with white meat if the pumkin/cabbage doesn't sound goot to you, a rich autumnal mushroom and madeira sauce (again, look to something oter than cream in the sauce if the dress might be tight!) with roasted veg.
I'd autumn the meringue too (I love pavlova! great suggestion) and srve it nutty, with either haelnuts, or creme de marron, or instead go for red wine and spiced poached pears (low fat) or blow the diet with tarte tatin or some other apply toffeeish/caramely sort of pud to keep with the seasonal theme. To keep it even easir an apple or apple and caramel cake only needs carrying to the table on the day.0
