2/3 course meal?

Im having my mother in law, brother in law and his pregnant gf over for dinner later( just arranged:eek:) any had a quick root through kitchen and need help frm u lovely lot (again:rolleyes:) theres is also myaself, oh, and two boys.. Here is my list and please please help me with this, its a long story but i want to prove myself( will explain later)

StoreCupboard:
gravy powder
pizza base mix
nandos garlic pri peri
batter mix
garlic
lasagne sheets
pastas
brown rice
tin mackeral
tin sardines
passata
egg noodles
selection of herbs, spices, stocks and chutneys
sundried tomatoes
bbq seasoning
polenta
sponge cake mix
chocolate sauce
cocoa powder
geletine
dried fruit(raisins etc)
canned sliced peaches
vanilla essence
castor sugar
plain flour
corn flour
chocolate spread
strawberry jam
icing sugar
eggs

Freezer
mix veg
green beans
peas
paninis
bagels:rolleyes:
ice cream(mint, choc and vanilla)
puff pastry


Fridge( all just useable)
milk
natural low fat yogurt
parmesan
cheddar
beetroot
leftover chinese;)
4 pork steaks
half small lamb joint(uncooked)

All the fridge contents are about to perish orjust about useable so any other ideas to save it? sorry hope im not pushing my luck?

    it sounds to me as if you have the makings of an italian meal - lasagne using the lamb minced fried mixed with the gravy mix topped with some cheese sauce and parmesan, served with the green beans perhaps? use the pizza base mix with added cheese some crushed garlic and dusting of parmesan as a sort of italian bread. for dessert I would cook the puff pastry in two long slices sandwich with strawberry jam and the yogurt (sweetened a little with icing sugar ) top with the other slice of pastry and dust with icing sugar. call it something vaguely italian (unless your family is italian then call it something english like cornish slice!)

    So, you've got 4 adults and 2 children to feed?

    You don't have much protein there. How small is the lamb joint? Enough for all of you? If not, it looks like you'll have to do the pork and the lamb. Although, thinking about the lamb, if you diced it, you could do a bit of a Moroccan thing and serve with brown rice and veggies.

    First thing would be to get the meat on to cook. What time are guests arriving? If you can get spuds you could do the meat with mash,roasties, mixed veg and gravy. Can't really go wrong with that. Ice cream and chocolate sauce for dessert.

  • thanku tandraig.. that sounds lovely..regarding the italian bread how do i go about it..? mix all ingredients together and cook as normal...? the desert sounds gorgeous...

    gigervamp, i know theres not alot there.. just shopping arriving tomorrow so these really are the last dregs..lol... how do u make morracon lamb? wouldnt even know where tostart...lol

    For the starter, you can whizz up the mackerel with some yogurt and garlic to make a pate/dip. Slice up the bagels thinly (and turn them into stick shapes) and toast them till really crispy. If that doesn't seem enough, chop up the sundried tomatoes and sprinkle some parmesan over them and drape over some bagels for some bruschetta-esque extra.

    For the main, slice up the pork steaks (nice thin slices so it goes further), marinade with the nandos peri peri thingy and do a quick stir fry with your egg noodles and your french beans with mixed veg. Add a fried egg on top if it looks like it won't be enough.

    For pudding, you can make the sponge base cake mix with some dried fruit.

    Perhaps OH is frantically clearing the place up? LOL!

    At 9.25 this morning dh put the phone down from his mum, having invited her and her friend for 'early coffee' as the friend is going home after their hols. He got cleared and vacced thru, I got some biscuits made and cleared the kitchen up a bit.Both had breakfast. He collected them as friend doesn't walk well and they arrived at 10.15.

    I think it was very good, as the place is more or less sorted and we have the rest of the day to do stuff.

    StoreCupboard:
    canned sliced peaches
    vanilla essence
    icing sugar

    Freezer
    ice cream(mint, choc and vanilla)
    puff pastry

    Pudding suggestion;
    • Defrost the puff pastry, then roll it out thinly to fit your largest baking sheet.
    • Lightly grease the baking sheet and place the pastry on top.
    • Score part-way through the pastry to create a 2cm border.
    • Drain the peaches, reserve the syrup for something else.
    • Tumble the peaches onto the pastry, make sure they don't sit on your border.
    • Just before you put it into the oven sprinkle on some of the icing sugar and a vanilla essence.
    • Bake in a hot oven for about 30 minutes, ideally after you've taken the main course out.
    • Serve with the vanilla ice cream.

    The pastry of the border will puff up and crisp, the peaches will soften and sweeten. Combined with the ice cream it'll be a lovely combination and most of the work can be done beforehand.
