Lamb Shoulder Fillets - any ideas?

Hi guys
My OH came back from Asda with some Lanb shoulder fillets he found on the reduced section (I've trained him well
).
Bit unsure what to do with them though. Any ideas?

I hot-sealed them in the fying pan, then just put them in the oven for half an hour. Then made the gravy with the scapings in the tin. That was such a lovely meal. I've got another couple in the freezer.I’m a Forum Ambassador and I support the Forum Team on the Old style MoneySaving boards.

I usually chop them up and make a stew (bones go in as well, give it a richer taste). Our favourite is a Moroccan tagine, with chickpeas and dried apricots, and loads of cumin, coriander and cinnamon, served with couscous. Yum! But any lamb stew recipe would work well, there's enough fat on the shoulder chops to make it tasty!Cogito, ergo sum.0

I don't use fillets, but I am a big fan of shoulder joints and the recipe would work well for fillets too.
The meat needs marinating in a thick spice-herb mixture with olive oil. Use a good amount each of cinammon, cumin, chilli, coriander, pepper and salt, garlic and a bunch of whole garlic cloves and mix in a bowl with lots of olive oil. Rub this all over the meat before sealing the meat, and cook for 3-4 hours (big shoulder joint) covered. The juice makes a wonderful gravy.
