Quick budget meals

There are some brilliant ideas and recipes on here, and I wondered if you could help me.

I live with my boyfriend with slightly limited cooking facilities - much better than when I moved in - so I have two hobs, a microwave/ convection oven/ grill and a slow cooker.

I don't use the slow cooker much, and think that could be one answer.

We tend to get home late, starving hungry and are then in a hurry to eat. Sometimes this means we resort to a takeaway. Otherwise we seem to have pasta and pesto or a jacket potato, both of which we love, but I could do with some ideas for something a bit different.

We love salmon and prawns and cheese and eat everything apart from mussels (me) and mushrooms (him).

We eat meat, but a meal doesn't have to contain meat.

The pasta pesto takes about 20 mins, so that is my idea of quick.

Any recipes or suggestions very much appreciated.

  • go the slow cooker, dinner will be ready as soon as you walk in the door, and then you can have extra to put in the freezer so you could take it out in the morning then micro in the evening for a hm ready meal

    have a look at the "in my slow cooker today" thread, many recipes, and maybe have a look on the grocery challenge thread first page, as there are LOADS of recipes there, lots of quick ones,

  • Stir Fries can be done in a flash or why not try having a cooking day and prepare lots of HM ready meals and put them in the freezer - then all you have to do is decide what you want in the morning, get it out of he freezer and reheat when you get home.

    Stir fries are definitely good for speed - or, if you like Chinese, how about hm chow mein: cook some noodles, stir fry sliced veggies (and chicken/prawns/pork etc if you fancy it), mix together with a sauce made of soy sauce, sesame oil and a splash of sweet chilli sauce.

    Talking of sweet chilli sauce - my dad does a lovely quick meal by heating cooked prawns in sweet chilli sauce, and pouring over rice cooked in coconut milk. Super quick and really tasty! (Hmm, that might find its way into my meal plan again very soon!)

    Wow - that sounds amazing - I've got some prawns in the freezer, so I might be trying that tomorrow!
