dinner help needed

OK,

been v lazy today and not got as organised as i wanted. :rolleyes: Just seen the time and need to think about dinner. Havn't a clue what to cook. Its just me and i fancy using something with mince in it but don't feel like spag bol or chilli - can anyone make a suggestion. :confused:

In fridge I have:
asparagus
about 5 red peppers :eek:
carrots
potatoes (but need to be peeled)
onions
cheese
eggs
milk
minced beef


i have all the ususal storecupbard ingredients as well as numerous spices and dried herbs. Plus i have a freezer with broccoli, peas, chips, etc.

all suggestions considered! :T

    How about shepherds pie? Lovely onions and mince with carrots and peas in gravy, topped with mashed spuds and cheese. Yum! You could also serve asparagus on the side too.

    How about...
    Fry the mince with some onion and herbs/garlic and some finely diced carrot some tomator puree. Fill a pepper with the mix and top with grated cheese - bake in the oven until the pepper is cooked. Serve with lightly poached asparagus.

    Or more substantial....
    Make up the mince mix but make it a bit runnier with tomatoes. While that's cooking microwave the potatoes until tender and then cut into rounds about pound coin thickness. Grease the bottom of an ovenproof dish and line with the potatoes, season, and then add the mince mix toppped with cheese. Bake in oven until it looks yummy. Alternatively skip the cheese and just before it's ready put some natural yoghurt on the top and sprinkle with paprika - back in the oven for a minute (any more and the yoghurt goes yuckky).

    ive made a pan of bolognese, but instead of having it with spag im gonna roll it up in tortillas ,then pour over cheese sauce,sprinkle grated cheese and bake in the oven :)

    If you dont want to peel the potatoes, pop a couple in the microwave for 6 or 7 mins, fry up some mince, onion and red pepper. maybe grated carrot.
    When potatoes are done, take out the insides and mash together with mince mixture and top with grated cheese. Put back into skins.Put under grill or back into microwave for a couple of minutes

    Maybe a bit late but make up a shepherds pie style base or bolognasie and top with frozen chips - brush with a little oil and cook.....yummy.

    Well I haven't eaten yet so am going to have some bacon, sausage, egg and tomato with a couple of bits of toast :)

    ok - well in the end i went with frying the mince with an onion and tomato puree and stuffing the pepper. served it with rice and asparagus. it was yummy!

    like the idea of shepherds pie made with chips though - perhaps that's tonights option.....

    edinburghlass - you must eat earlier otherwise you'll get indigestion :eek:
