How do I make a bramble pie?

I picked some lovely brambles this afternoon, there's actually lots more to collect but that will be tomorrow, maybe, as I need some gloves and proper footwear. Anyway I digress, how do I make bramble pie? Or even with apples too? Does anyone have any other ideas and recipes for other things to do with brambles?

Hiya, I cooked apple and blackberry crumble today. We also eat blackberries with icecream. I put some in the freezer to eat when out of season too. Happy eating....JulieIf winter comes, can spring be far behind?

I made blackberry and apple jam from http://www.cottagesmallholder.com/?p=430 today.
Last week I made blackberry jam using the "flexible jam" recipe on bbcgoodfood.com
There is a good pie recipe on there too "blackberry and apple pie" in the search box should do it.
I have stewed some and frozen them and have made crumble as well!:eek:0 -
Pie
To make a blackberry and apple pie, all you really need to do is:
1) line a pie dish with shortcrust pastry
2) cover with a layer of sliced apples and a layer of blackberries
3) sprinkle over a tablespoon of sugar (brown is best)
4) cover the pie dish with pastry
5) bake for about 30mins on a medium hot oven.
Compote
I also make compote, which is lovely with ice-cream or yoghurt. It'll keep for a week or much longer if you can/bottle it:
Ingredients
6oz sugar
1/2 pt water
1lb desert apples
1lb blackberries
1lvl tbsp cornflour
Combine sugar and water in saucepan. Stir over low heat, till sugar dissolved. Bring to boil, simmer 1min. Add apples to saucepan and cover with lid, simmer 1min. Add blackberries. Bring back to boil. Draw off heat. Leave, covered, for 15mins - till fruit is tender. Strain fruit. Return juice to saucepan. Blend cornflower with a little cold water - stir into juice. Bring up to the boil, stirring until slightly thickened, shiny and clear. Add juice to fruit, chill well before serving.
