    Here's our family recipe

Grated cheese with knob of marg/butter; scant spoon of english mustard/powder; few drops of vinegar; optional chives/chopped spring onions/white onion. Mash up well with a fork. Even better if allow flavours to develop.

Not really for the faint hearted though!!!
  • Ooh I love cheese and onion sandwich filler for must give my own a bash.

I personally like grated mature cheddar mixed with pickled onions and salad cream or cheddar mixed with pickle. I'm sure it uses less than adding the components separately!

Fantastic ideas. DD1 is reluctant to eat cheese so may give these ideas a go!

    I make one with yogurt.

I start off a HM yogurt (1 litre using easiyo maker and 2 spoons of my previous yogurt I use 1 easiyo starter a month)
I leave it for 24 hrs
Srain some whey off and put in again with more hot water for 24 hrs and then strain through a cloth.
I have had success in adding, chopped basil, garlic, rosemary (fresh) and with dried chives I add these at the beginning
Its nice in sandwiches and the whey can be used in scones and savory oat cookies or in hm bread.
I use tesco value dried milk for the milk and make it up with about twice the amount of suggested powder

Lentil pate is also nice in sandwiches and hummous

I tried making this and used chives in the yoghurt. It's lovely, creamy and just like low fat cream cheese at a fraction of the price. I had no idea it was so simple.
    Thanks vij.

i have just made cheese spread...al la "seriously strong"..but better.
I am afraid the measurements are American.

1 & 2/3 cup of evaporated milk (tesco cheapest)

1lb of a processed type cheese, grated. (i used Edam)

heat and stir over a pan of simmering hot water. When cheese
    melts,remove from heat and add

    2Tablespoons of vinegar
1/2teaspoon dried mustard (i added a tiny bit more)
    taste...salt if required.
    Stir occasionally as spread cools.
i put some in a jar with chilli and garlic, and left some plain.

This is much better than any commercial spread...i haven`t costed though as someone gave me the cheese. But think of all the things you can add, pickle, chilli, spices etc
    easy for packed lunches.

This recipe comes from "More with less cookbook" by Doris Longacre (i bought recently on ebay)
I have had her book Living More with Less for years,it is an excellent resource for living on a low income...basically its more about your attitude to things...highly recommend both books.
