Hi
Has anyone any recipes for making cheese spread? It must be a cheaper way of using cheese in sandwiches than slices.

You can make a cheese savoury spread similar to those pots of supermatrket ones with grated cheese, mayo, and finely chopped onion and celery. It spreads nicely and goes a lot further - I use it when I have to do butties for Scout fundraisers. Mature cheese tastes nicer - I chop the onion and celery in the food processor - then grate the cheese and then blitz it quickly all together with the mayo.“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

Yummy! Of course, the celery/onion/mayo combo is terrific with tuna, boiled egg or cooked chicken left-overs as well. This thread is making me rather peckish0

Ok, I know you wanted a cheese spread and this uses cottage cheese but it might be a nice change.
Cucumber and cheese spread
8oz of cottage cheese
1 tsp lemon juice
dash of tabasco
half a small onion, grated or two or three spring onions finely chopped
6oz cucumber, peeled and finely chopped
Mix together and cover and chill in the fridge for about an hour. This makes a soft spread. I have added a little grated cheddar to it at times but it doesn't need it.

I make one with yogurt.
I start off a HM yogurt (1 litre using easiyo maker and 2 spoons of my previous yogurt I use 1 easiyo starter a month)
I leave it for 24 hrs
Srain some whey off and put in again with more hot water for 24 hrs and then strain through a cloth.
I have had success in adding, chopped basil, garlic, rosemary (fresh) and with dried chives I add these at the beginning
Its nice in sandwiches and the whey can be used in scones and savory oat cookies or in hm bread.
I use tesco value dried milk for the milk and make it up with about twice the amount of suggested powder
Lentil pate is also nice in sandwiches and hummous0 -
Thank you very much, some great ideas there, and different ones too, with cottage cheese, homemade cheese and grated cheese - will give me some variety as well as saving the pennies.

My cheese savory is grated cheese, grated carrot, grated onion hand mixed with salad cream to bind it. Tastes just like Greggs cheese savory.

That is how I make mine too! Though sometimes I mix Cheddar with Red Leicester.

I used to make cheese spread when my kids were little, I just heated up some milk and stirred in grated strong cheddar. I can't remember the exact amounts but it chilled down to a spreadable cheese that I kept in a pot in the fridge for a few days afterwards.0
