Hello. As everyone is aware it's elderberry time, lots and lots of them. I have used elderberries before but have forgotten if you can freeze them as you would Blackberries. Can some kind soul jog my memory please. I have made jam with them and it was lovely. I want to make crumbles and pies, but don't want to be slaving away all hours. So if anyone knows if elderberries can be frozen in the rawish state. please let me know its driving me nuts.lol Thanks for any help and sorry about being long winded.

We bung them in the freezer before using them for wine - helps to break down the structure and get more juice out.

I froze mine before making jam with them. Did an apple, elderberry and nutmeg jam which I think is lovely but the kids aren't so keen. It worked perfectly though so I dont think freezing them has any effect. I just forked them off the stems onto a baking tray and open froze before tipping them into a freezer bag. When I wanted to use them I just emptied the bag straight into my stock pot without defrosting first and carried on as normal.

I freeze mine. I like to make 5 galls of wine at a time and I can't collect them all in one picking. Have to spread collection out over about 3 weeks.0
