random baking ingredients

Hi there,

I have been sorting out my cupboards this week and found a few packets of totally random things that I have no idea how to use

-large bag oatmeal (bought by mistake instead of oats)
- large tin black treacle (bought by mistake instead of golden syrup)
- ground rice (can't remember what bought for)

Also enough cornflour to thicken a lifetime's worth of sauces and enough stuffing for a lifetime's worth of roast dinners!

Any ideas?:confused:

    You can use the oatmeal to make digestives. I'll see if I can find the link to the recipe.

    Black treacle is used in gingerbread type cakes and the ground rice can be used to make rice puddings.

    Treacle & oatmeal drop scones

    4 Servings2 oz Self-raising flour
    1 1/2 ts Level baking powder
    pn Salt
    1/2 oz Soft brown sugar
    2 oz Medium oatmeal
    1 oz Butter
    1 tb Black treacle
    1 sm Egg well beaten
    1/4 pt Milk (scant)Sieve the flour, baking powder and salt into a bowl and stir in the sugar and the oatmeal. Gently melt the butter and black treacle together in a pan. Add to the dry ingredients and stir in with the well beaten egg and the milk. Heat a thick frying pan or griddle and grease lightly. Drop teaspoons of the mixture on to the pan; as soon as bubbles appear on the surface turn over and cook the other side. Serve hot with butter.

    Oaty Ginger Cake
    :

    1/2 pound of flour
    1/2 pound of medium oatmeal
    1/4 pound soft brown sugar
    1/2 teaspoon ginger
    1 egg
    8oz of treacle
    4oz of lard/butter/marg
    1/4 pint of milk
    1/2 teaspoon bi-carb-soda

    Mix together the flour, oatmeal , ginger
    Then melt the sugar, fat and treacle and add a little of the milk and well beaten egg
    Put the mixture into the flour and mix to stiff batter .
    Add the soda dissolved in rest of milk
    Mix quickly , pour in shallow tin 11 inches x 9 inches x 2 inches
    Bake 1 hour until firm in moderate oven.

    I haven't tried either of them so can't vouch for them but the ginger cake sounds nice, good luck and let us know what you do make and how you get on x

    This recipe will teach you how to make Ground Rice Biscuits. It is a quick and easy recipe to make. Ground Rice Biscuits are a different tasting biscuit but really good just try this biscuit recipe and I know you will enjoy it.
    Ground Rice Biscuits Ingredients
    1 egg
    125g butter
    1 cup plain flour
    1/2 cup ground rice
    2/3 cup caster sugar


    Ground Rice Biscuits Method

    Use a large bowl and add the butter and beat until smooth then add sugar and beat until combined. Add beaten egg gradually and beat until light and creamy. Stir in sifted ground rice and flour. Place mixture on to lightly floured surface then knead until smooth. Refrigerate for 30 minutes. Roll to 3mm thickness then cut into rounds with 5 cm cutter. Place on lightly greased oven trays. Bake the Ground Rice Biscuits in a moderate oven 12 minutes and cool on trays.

    This isn't the recipe I was thinking of (I'm sure it was on the Guardian website by Hugh F-W) but it looks similar.

    ground rice is what i use to make the sponge topping on bakewell tarts.

    That's the one! I couldn't find it using the search so was trawling through all his recipes on there. Got as far back as 2007, but obviously not far enough!

    Oatmeal makes really good flapjacks for toddlers but I like them too.

    Make fruit puree with 1 1/2 oz dried apricots, sultanas or any dried fruit you like add a bit of water and boil for 5 mins then puree.

    In a bowl put 5 1/2 oz oatmeal, 1/4 teaspoon bicarb, add the puree and 1 tbsp of sunflower oil (but I use olive oil) mix well.

    Add 3tbsp water bit by bit until the mixture is doughy, leave to rest for a few mins.

    Spread the mixture over a baking tray and cook in the oven for 15-20 mins at 180. score lines into squares while stil warm so you can break it up easy when cool.

    I don't really measue the ingredients and it always turns out great.

    Use the treacle wherever you would use golden syrup. It will have a different flavour but otherwise will work as well.

    It is worth remembering the treacle is actually quite a nutritious food containing useful amounts of calcium and iron. you can taste the iron in it.

    100g of black treacle will supply you with 62% of your daily calcium requirement and 100% of your iron requirement -according to the tin. Obviously 100g is a lot of treacle, but you can see how using it in scones and flapjacks can increase the nutritive value of baked goods.

    Oatmeal is really good for you too. Not only is it a wholegrain but it has lots of protein in it too;) Add it to bread recipes for an oaty bread.
