COOKING apple puff pastry tart - for this weekend!

Hi there am a real lurker but hoping someone can help me out. I am having some family round for food at the weekend (Sunday). Will be making various bits and they are bringing some. I want to make a pudding, and in true o/s style want to do it with bits I have hanging around!!

I have puff pastry in the freezer that needs using, and some windfall cooking apples. I have found various recipes for puff pastry apple tart type puds, but all with eating apples. I am a pretty competent cook, but only with a recipe!!! I presume I can do these recipes with the cooking apples, and just add a bit of extra sugar - am I right??

Or if you have any other ideas using the pastry and apples, that would be great.

    Have you looked up a recipe for tarte tatin? It can be done easily with puff pastry, and looks seriously impressive.

    If I were using cooking apples I would cook them a little before using in a pie, in a saucepan with about a tablespoon of water, some sugar and a little cinnamon. Just cook them on low enough to soften slightly and I allow them to cool slightly before putting in the pie. You could thicken the juice with a little cornflour this might stop the pastry getting soggy. Hope this helps and that you enjoy the pie

    It does look impressive, but if you use Bramley type cooking apples it won't look as good. For authentic tarte tatin you need a firm eating apple that holds its shape;)

    Cookers tend to cook to a fluffy mush so I think you'd be better making a pasty rather than an open tart.

    Cook the apples with sugar and some cinnamon or cloves if you like. Use to fill either one big pasty or make smaller one for each person. Cut rectangles of rolled pastry, place filling on on half and wet edges, fold over and seal well. Bake for about 20 mins in a hot oven.

    thank you everyone for your ideas! I have been saved for making puds this weekend, someone else is bringing 3 so I think we might burst if we have apple pie too! will definitely try the pasties another time though, they would be nice for the children. COoking the apples first is a great idea cos then I can see how sweet or sharp they are.

    Thanks thriftlady, I thought that might be the case, but as I can't stand the things (cooking apples), I've only ever used eaters - for apple crumble, everything. If anyone is still interested in recipes there are 3 in the OCtober edition of Prima pages 108 and 109 using bramleys, they all look pretty yummy! One is apple pancakes, baked toffee apples and puff pastry apple tart! Just what the OP ordered, although it has Bramley's and Pippins in the recipe for those, but OSers being what we are, I'm sure it could be adapted.

    i use a mix of cooking apples and eating apples in pies. seems to work ok.

  • Just wanted to say thanks for all your advice, I eventually turned my apples and pastry into some lovely open caramelised apple tarts, so thank you for your inspiration! They were lovely - yum yum.
