Left over Ratatouille?

I've just made a couple of vegetable lasagnes ala Delia but made have some of the veg left - kind of a ratatouille, don't want to waste it but haven't got any more cheese sauce left - could I freeze it for another time or has anyone got any suggestions what I could make with it. Many thanks.

    Yep, you can freeze it.

    With pasta? As it is with anything - roast dinner, with veggie sausages or other veggie food? Chuck it in a shepherds pie? Blend it up and have it as soup?
    Ever wonder about those people who spend £2 apiece on those little bottles of Evian water? Try spelling Evian backward.

    If you are going to freeze it - remember to portion it up so that you can take out exactly what you need for that meal and not all of it!!! I speak from experience!!!!!!!
