pizza express pizza sauce recipe??

Hi there

does anyone have a vague recipe for the sauce they use on pizza express pizza's? I ask as its my daughters fav kind of pizza & I want to try & replicate it at home

    sorry to hijack the thread I really like their salad dressing - I know you can get it in the shops but it's more money than any others and a smaller bottle - anybody managed to replicate it?

    I always thought the most important ingredient of a pizza was the cheese.

    I've never ate pizza express pizza's so I can't answer your question, however Ragu bolognese is good.

    My pizza sauce always goes down well, but as I don't eat pizzas out anymore I don't know how it compares....

    For 1 very large pizza (or 2 medium):

    Half a tin of chopped tomatoes
    Good pinch of coarse ground black pepper (or from mill)
    Teaspoon of italian herbs/seasoning (or oregano)
    Dash of good olive oil
    Tablespoon of tomato puree
    Teaspoon of sugar
    A touch of salt

    Blend together with a stick whizzer or an ordinary blender

    I tend to make up a whole tins worth at a time and the what's not used freezes well or keeps in the fridge for a couple of days.

    personally i find passata the best for pasta sauce - it needs reducing down in the pan pretty much the same recipe as above but i also add garlic and miss out the olive oil.

    as its passata theres no need to blend - just wait til its a tomato sauce type consistancy.

    try adding a little, just a little balsamic vinegar but this only works with a touch of sugar..........yum yum yum

  • yip another one for passata here. i have actually gone off tinned tomatoes...seems to be more skin in them than before? a similar recipe to above....passata, some oil, some sugar n salt...might put some mixed herbs in. simmer for 15 mins or so then leave it to cool.

    I've made pizza sauce from those packets you buy. They're only a few pence and they work a treat on pizza's. Currently I'm using the lidl ones, I add a little basil, oregano and tomatoe puree to freshen it up. I've also used colemans pks in the past.

    I guess what I forgot to mention, is that unlike some of the other recipes this doesn't need any cooking. Just whizz it up and slap it on the dough.:beer:
