making & storing caramlized onions

Hi there
I want to make some caramalized onions, I know roughly what to do 0 have been making them for years, but I want to store them afterwards, does anyone have a good method for this & does anyone add anything interesting to theirs? Mine will probably sliced onions cooked long & slow with some butter or oil (or both) then a good slug of balsamic vinegar or maybe some brown sugar, if feeling adventurous I might add some thyme or use red onions

I would freeze them rather than bottle them, because if you bottle you have to use vinegar or sugar as a preservative, which would overpower the other flavours.Blessed are the cracked for they are the ones that let in the light
