Title says it all really
I'm a great of muffins, but I don't always have the time to make them fresh from scratch it week. Would it be possible to make a large batch of muffin batter once a month, then freeze it - so that I can take out a portion once a week to defrost then just plonk it in cases and bung it it in the oven, so I still get to have fresh muffins? Or does the batter not freeze well?

i've never tried but cooked muffins freeze well and a short blast in the microwave makes them all warm and fresh bakedNonny mouse and Proud!!

I would't for 2 reasons:- making the batter takes a few mins and cooking takes half an hour. Cooking and freezing a batch will save more time, surely
- as soon as the wet and dry ingredients are mixed they start to release carbon dioxide, which helps the raising. I'd be concerned that the freezing and defrosting of the batter woudl inhibit this

I bought it frozen in another country and it worked well for me... not sure if they used anything weird in the mixture, but it tasted great... Happy Baking!0
