Left over Homity Pie mixture

Hello all,

Having read on here this morning about Homity Pie, I decided to make one, and very nice it looks too :D

However, I now have left over mixture, about a 1/3 of enough towards another pie.

Any ideas what to do with it, bar making a smaller pie :D

I know I can freeze it as I can most things, but what to do with it after that.

Thanks in advance

I'd just eat it heated up for my lunch with some salad.

    Homity Pies -veggie classic;)
  • you could use left over mix to make burgers. Just shape it in your hands into burgers, then either bake in oven or shallow fry. You could try mixing it with with some stuffing mix, which has been made up as per instructions on pack, then make into sausage or burger shapes and bake, or add tuna to it and a tin of sweetcorn and make burgers.

I always make an extra pie to freeze. You could add it to a Spanish omelette.
