I kept all my easy cook magazines or thought I had but I have mislaid the one with the butternut squash soup with tinned tomatoes and garlic in it - anyone have their copy and could post it please - I would be very grateful as it was a really good recipe.
Saving in my terramundi pot £2, £1 and 50p just for me! :j

I tried the BBc site but there are loads but not the one I was looking for = so silly as it must be somewhere - I will prob find it after someone else has found it too; Would be grateful for it - not long into the first few it was.Saving in my terramundi pot £2, £1 and 50p just for me! :j0

I've had a look through all mine, and I must have missed a couple at the beginning as I have them all the rest ;( Anyway I have found one with tinned tomatoes but unfortunately it doesn't have butternut squash or garlic in..
Chunky Winter Broth © Easy Cook
Two 400g cans chopped tomatoes
2 litres vegetable stock
4 carrots, peeled and sliced
Two 420g can mixed pulses, drained and rinsed
175g spinach
1tbsp roasted red pepper pesto
Tip the tomatoes into saucepan with the stock, bring to the boil, turn down the heat and then add the carrots. Simmer for 15mins or until the carrots are cooked.
Stir in the pulses and spinach and heat until the spinach has wilted. Spoon in the pesto and gently mix into the soup.
Serve with crusty bread..
