Does this sound edible? Any tips?

A couple of my friends are coming over tomorrow - we never have anything fancy to eat, usually pasta. I am hoping to make an all in one pot meal as last time we all got rather drunk and my neighbour had to finish the cooking. :o

I was thinking of making cauliflower and brocolli bake, as I have some cheddar that was frozen and has lost it's texture and needs cooking with. I can't make a white sauce to save my life, so I have a tin of Batchelor's condensed mushroom soup and some leftover wine. I have some new potatoes which need eating up so thought I might slice them up fairly thinly and throw them in ... and some bacon to grill, chop up small and mix with cheese for the topping.

Does that sound like it will work? Do I need to par boil the potatoes? :confused:

    I think if you cook the potatoes for 5 minutes then slice them up,you could (if there are enough) layer them over the top. If not, you could dice them. I think it might help if you cook the broccoli and cauli for 5 minutes as well first. The soup and a dash of wine sounds ok. You could do a breadcrumb and grated cheese topping and have your bits of bacon in with the sauce. If you add some softened chopped onions and garlic as well that would be nice. Bake it for about 40 minutes or until the topping is brown and the veggies cooked and maybe have some garlic bread on the side with a tomato salad?

    The veg is frozen so was just going to defrost, sorry should have said. Is it OK not to steam the veg in that case? I love garlic and have plenty of potatoes! I like the idea of breadcrumbs too, thanks very much for your reply. :T

    If it is frozen veg I would make sure it is defrosted otherwise all water will come out of it and make your sauce watery. I'd cook the spuds rather than part boil them otherwise your veg might be a soggy over cooked mess.

  • for easy cheese sauce a use own brand cream cheese warm it in a saucepan adding milk and stirring till you get the desired consistency,then add blue cheese,strong cheese whatever cheese use like, stir in veg or pasta add more cheese ontop and oven or grill,never fails,Sue
