This is the one I use, I think it was in Good Food mag about a year ago. It less 'soupy' than some recipes and more like a saucy noodle dish

Prawn laksa

1 tbsp red thai curry paste
400ml tin coconut milk
200g prawns
150g egg noodles
Bunch spring onions
2 tbsp chopped coriander
Zest of 1 lime

- Heat curry paste for 1 min and add coconut milk
- Add prawns and simmer for 5 mins
- Add noodles and simmer for 5 min
- Stir in spring onions and serve with coriander and lime zest

Or you could do a Thai one - either green or red Thai paste, stir fry in the prawns & then add the coconut milk. With jasmine rice it's really good - sorry, don't have a recipe for the pastes though, I'm not so OS & tend to buy the ready made stuff!
