Hi
I am moving house in a couple of wks and have just done a freezer inventry. I have found some frozen value prawns, some red and green chillies and half a can of coconut lurking in there.
does anyone have a recipe to use them up? curry maybe?

This is the one I use, I think it was in Good Food mag about a year ago. It less 'soupy' than some recipes and more like a saucy noodle dish
[FONT="]Prawn laksa[/FONT]

[FONT="]1 tbsp red thai curry paste[/FONT]
[FONT="]400ml tin coconut milk[/FONT]
[FONT="]200g prawns[/FONT]
[FONT="]150g egg noodles[/FONT]
[FONT="]Bunch spring onions[/FONT]
[FONT="]2 tbsp chopped coriander[/FONT]
[FONT="]Zest of 1 lime[/FONT]
[FONT="]- Heat curry paste for 1 min and add coconut milk[/FONT]
[FONT="]- Add prawns and simmer for 5 mins[/FONT]
[FONT="]- Add noodles and simmer for 5 min[/FONT]
[FONT="]- Stir in spring onions and serve with coriander and lime zest[/FONT]0 -
Or you could do a Thai one - either green or red Thai paste, stir fry in the prawns & then add the coconut milk. With jasmine rice it's really good - sorry, don't have a recipe for the pastes though, I'm not so OS & tend to buy the ready made stuff!Total Debt 13th Sept 2006 (exc student loan): £6240.06 :eek:
