A quick roasted veg question!

Can I roast carrots and parsnips without peeling them? :undecided

Don't think I can be bothered to peel 1.5kg of the blighters. :)

    I wouldn't unless they are organic, although so long as you top and tail them (because these are the parts that absornb most of the pesticides) you should be OK.
  • Yes I've done this with carrots before and they're yummy, sure it would work with parsnips too, obviously wash them first and maybe scrub them a bit if you can be bothered ;). Try adding a bit of honey in about 15 mins before they're done for extra sweetness too. Mmm I want a roast now :D

    I buy sainsbugs "no peel" carrots :o But I don't bother peeling any others I buy either - just wash, top and tail and cut up.

    I had roasted carrots on sunday - they are lush.

    It depends on the skin surface but if you can't be arsed then you can't be arsed.

    The carrots will definitely be fine - I never bother peeling them unless they're very dirty. With the parsnips I think it depends how old they are - I find the skins can get a bit tough if they've been stored for a while. Giving them a good scrub can help - I use a non-stick pan-scourer (an unused one, obviously!) which strips most of the skin off anyway.
