    I buy a 2.4kg chicken
    first day cook it in the micro in a big bowl (lots of stock) and eat the drum sticks/thighs with a bit of breast as a roast
    2nd day stew using stock and chicken with barley, potato, carrots , broccoli and dumplings
    3rd day on a pizza or in a pie or bolognese
    4th day chicken paste sandwiches and put the carcass in the freezer till there are 4 when I make soup.
    We eat about 8oz of meat for 4 in most meals except for 1st day of a chicken which might seem a bit low but it is plenty.

    I can recommend Jocasta Innes' "Pauper's Cookbook" which describes her method of Programmed Eating.  She recommends one big cooking day each week where you fill the oven with casserole, roast joint etc and suggests menus for a week's leftovers.  It was written in 1973 so it's a bit dated - you don't have to go to a Soho deli to buy salami these days!  Even if you don't want to follow her menus exactly, it's still useful.  Sadly I dropped mine down the back of the fridge last night  ::) so I can't quote any recipes!

  • I used to have a heap of these years ago - one of our favourites was ~

    Bolognese - make double (or more anyway) - Bol for day 1 then day 2 any one of -

    Bolognese pie - a great favourite with son and friends, make pastry case, bake blind, shovel in cold bolognese and top with heaps of grated cheddar ans mozzarella, pop into oven for about 15 minutes till cheese bubbling and browned. mmmm!

    Chilli - shove in some red kidney beans (or baked beans - another favourite of son's) and a bit of minced chilli.

    Lasagne - make it a bit sloppier with a splash of water and layer it with lasagne sheets. top with 1/2 to 3/4 pt of white bechamel sauce and grated cheese - bake inoven @ 190 deg C for 25 - 30 mins.

    Italian Shepherd's pie - warm up bol in microwave and put it in pyrex, top with mashed potatoes and cheese if likes, grill for a few minutes till top is crunchy.

    Italian mince and dumplings - put bol in saucepan, add a splash of water to make it more runny, maybe an oxo or some bovril to make it more beefy. make up dumplings (use 4oz s/r flour, pinch salt, 2oz vegetable suet - makes 4 canonball-sized dumplings, add herbs or mustard powder if liked) - drop the 4 doughy dumplings in to the stew (the liquid should be half way up the dumpling). cover tightly and simmer for about 10 - 15 mins then serve.

    wow, some great ideas - thanks - I'm going to look at those cookery books once I have finished here:)

    Anyway, the recipe for minestrone soup/pasta bake is as follows - well, its more a guide as I *never* make it as it is supposed to be... It serves 3 easily for 2 days, I find.


    2 large onions
    oil for sauteing
    1 large potato
    2 carrots
    some cabbage, chopped
    I sometimes add courgette or sweet potato or really any suitable veg I have needing to be used up

    garlic to taste ( 1 or 2 cloves usually)
    1 tin tomatos
    1.5 pints stock
    herbs to taste - oregano, bay, basil, thyme - whatever you like, really
    2 tins white beans (haricot, cannellini are recommended, but I sometimes use chickpeas or even aduki (which are red) if its what I have - rough equivalent of 8 oz dried beans, soaked and cooked)
    2oz macaroni
    salt and pepper

    Saute the onion till softened, then add the veg and garlic and saute for 5 mins. Add the stock and tomatos and herbs and cook for 20 mins or so. Add the macaroni and leave to simmer until it is cooked (10 mins or so) - add salt and pepper to taste.

    Serve with some grated cheese on top if liked.

    Leave the leftovers in the fridge overnight and then simply bung in an ovenproof dish, top with whizzed up breadcrumbs and cheese and bake for half an hour at about gas 6/7 (roughly 200C or 400F *I think*)
