hi,
I jave just attempted a jacket spud in the oven. I left it in for an hour and each time I checked it, it seemed to have got harder. I have just thrown it away and it was burning on the outside and rock solid on the inside even though I cut it open.
Also I waaaaaaaaay over made rice and now I have loads which no-one seems to want - any ideas on what I could do with it? I just cant afford to waste things at the moment.

I do mine in the microwave as really can't justify putting the oven on for one potato! I do have a combi oven/microwave so could use that setting if needed, but they seem to cook fine just being microwaved.
With the rice I would make some egg/veg/chicken fried rice. Or maybe a rice salad.Grocery challenge - Nov: £52/£100

I always push a metal skewer through my jacket potatoes when I do them in the oven - they cook faster & the heat is conducted through to the centre. If I'm in a hurry I do them for 5 mins in the microwave first, but I love the crispy skin you get in the oven.
Rice: Have a stir fry tomorrow and use the rice there? Stir fry is my best "cheap & left over meal". One chicken breast can do 3 people, then pad it out with whatever veg you've got0 -

Thanks!! I will have a look at the link. I pay rent for all in so it doesnt make much difference to me, apart from that we don't have a microwave.
I will have a go at egg fried rice and maybe the veg fried too as I have been planning to do a stir fry for awhile now.

I cook them in the microwave then crisp them up briefly in the oven.
some potatoes are evil though - no matter how long you cook them there is always a raw bit in the middle - thought it was just me imagining it but my friends say it happpens to them too.August grocery challenge: £50
