apoligises if these are listed somewhere, i am new to os
if anyone could give me recipes or links for the following
baked corned beef hash
fish cakes
homemade chicken nuggetts
beef wellington
also any ideas on what i can cook/serve with scallops and venison?

hi yippee,
if you look on the first page of the grocery challenge i think we have links for most of those.
hm chick nuggets btw are very easy, just chop chicken into chunks, coat in flour, then beaten egg then breadcrumbs and either deepfry (not my prefered option) or bakefor about 20-30 mins, depending on the size of the chunks

STUPID QUESTION ALERT is there a method of making breadcrumbs? do you just crumbled bread? or do u need to leave it to go stale? is it just the crust or any part?
also to make the nuggetts with a cornflake coating is it the same process?0 -

no such thing as a stupid question (well there are but this isn't!)
i just get a couple of slices and blitz in the food processor, same for cornflakes, maybe just pulse it tho til you get the consistency you want, or put some flakes in a plastic food bag hold the top closed and beat with a wooden spoon to get multi sized crumbsNonny mouse and Proud!!

i use ruskoline. never tried iwth cornflakes (bash them up) just seem to think they must be terribly crispy?
instead of nuggets you can do it with half a breast flattened slightly with your rolling pin or some other strong piece of equipment then coat it the same way.
i dont deep fry either but what i do do is gently pan fry till slightly brown then into the oven to finish off. just to make sure its well cooked.0 -

fishcakes are really easy to make. Just cook fish and flake. Add mashed potatoes, chill and heat in oven or fry. You can make them fancy with herbs or a crunchy coating but that's the basics.
BTW I am fascinated by the idea of being excited about Christmas. Why? I detest it.0 -

xmas is my favourite time of the year especially as i now have 2 little ones to get excited with, dh isnt that bothered! it sjust such a happy time!

CORNED BEEF HASH
This simple store cupboard classic can either be quickly fried in a pan or slowly cooked in the oven, when it is sometimes called a corned beef casserole.
Serves 2
INGREDIENTS
1 tin of corned beef
1 potato
1 onion
1 tablespoon of oil (if pan frying)
125ml of water (if oven cooking)
1 beef stock cube (if oven cooking)
METHOD
Cut the corned beef into 1cm (½ inch) cubes (see Tips). Peel the potato and chop it into 1cm (½ inch) cubes. Peel the onion and chop it into tiny pieces.
TO PAN FRY
Put the oil into a frying pan on a medium heat. Add the onion and fry until golden brown and softened. Stir frequently to stop it sticking.
Add the potato and fry until brown and crisp. Stir frequently to stop it sticking.
Add the corned beef and cook until it starts to brown at the edges. Stir frequently to stop it sticking.
TO OVEN COOK
Put the corned beef, potato and onion into an ovenproof dish with a lid. Add the water and the stock cube. Stir thoroughly.
Put the lid on the dish and cook in a preheated oven at 180°C, 350°F, gas mark 4 for about an hour until the potatoes are tender.
Remove the lid and cook for another 20 minutes until the top is browned.
ADDITIONS & ALTERATIONS
You can add all sorts of things to this basic recipe, for example, baked beans, chilli powder, herbs, garlic, mushrooms, spices, Worcestershire sauce.
Serve the pan fried version with a fried or poached egg and brown or tomato sauce.
The oven cooked version can be done with layers of sliced corned beef, potato and onion.
TIPS
It is easier to cut corned beef, if it has been chilled in the fridge beforehand.
What to serve with scallops? Simple. As little as possible. For two people, I just saute them in 2 tablespoons of butter, with 1 clove of crushed garlic and a little chopped parsley. As it's a dairy-based sauce, serve with 100g per person of egg pasta, like tagliatelle or fetuccine. Sometimes, less is more. Rose wines go really well with scallops. BTW.The acquisition of wealth is no longer the driving force in my life.0
