Easy healthyish recipe for saute potatoes with skins on please?

Sorry for opening my own thread. I don't know how to find my way around this site yet. I hope I'm in the right place though.
My boyfriend is coming to stay while my parents are on holiday and our food tastes are a bit incompatible. He eats junk basically, and I live on muesli, salads, fruit, crudites and hummus!
I want to cook some meals that are healthy for me but still nice for him and I thought I could do slices of potato still with their skins on and it would be sort of like chips and sort of like the potato skins I've seen him order when we've been out.
What do you think? Is that doable? Does anybody have any other ideas for food that is kind of like junk food but not?

    how about doing them as wedges? just chop the spuds into the wedges and mix in a bowl with a little drop of olive oil and some herbs and spices, bake for about 30 mins at 180c and voila scrummy healthy food!

    how about veggie chilli on jkt spuds? he coudl load up with sour cream and you could stick to the home made guacamole :)

    egg and chips is good, poached or scrambled eggs with hm chips

    you could do him a plate of nachos? i empty a pack onto a plate load up with salsa, cheese jalpeno's and stick under the grill for a couple of mins, then take out and top with sour cream and guacamole, hubby love it ( i don't but nvm!)

    Totally doable;) Best and healthiest way is to cut them into wedges, put in a bowl, sprinkle over about a tablespoon of oil, add some seasonings eg-salt, pepper, spice mix, herbs, crushed garlic. Toss them around with your hands until evenly coated with oil. Put on a baking tray and bake in the oven at 200 for about half an hour.

    another good way with potatoes ... same sort of idea as wedges, but they come out more like a cross between a chip & a baked potato, delicious :)

    scrub them, halve lengthways & put them cut side down on a baking sheet that you've rubbed some oil on (sprinkle a little salt on the tray too if you like) you can get away with as little as 1/2 teaspoon of oil, but a bit more makes them tastier, then bake at 200 for about an hour or so till they're crisp underneath & soft inside

    these are nicer if you use a decent potato, rather than generic white potatoes, King Edwards or any red potato are good, oh & medium size work best

    & you can ring the changes with the oil you use, my favourite is cold pressed sunflower

    fat-free spicy chips!


    spray baking sheet with fry-lite
    cut potatoes into chips (with or without skin)
    parboil for 5 mins
    drain, put lid on pan and shake (roughs up the potato edges)
    sprinkle with schwarz cajun seasoning, or use own seasoning - paprika, salt, pepper, rosemary etc
    put in oven for approx 30 mins, turning once half way through

    makes lovely crunchy on the outside, fluffy in middle chippies :D

  • That's brilliiant ladies. Wedges! I didn't know what to call them. It's exactly what I needed. I'm having guacamole and crudites right now as I trawl though all the recipes deciding what to cook so I can definitely make the nachos idea work too. I'm making a meal plan, doing my shopping with a list and determined to do it all properly because left to our own devices I would probably live on apples and cereal and he would live on takeaways. My Mum's given me shopping money and even accounting for my boyfriend's appetite being bigger than mine I think if I play my cards right I will end up with change left over. Thank you everybody. Can i come back if I get stuck again? :o:)

    Fingers crossed for me then? I've only ever cooked for fun, and that was mainly cakes! I have never cooked to actually feed people before. :eek:
