A basic cassarole recipe?

Hi,

I am looking for a simple cassarole recipe that I can make. I have tried the cross and blackwell mix and thought it was horrible. I not a very good cook but I am trying to make a meal plan and add some new meals. We do not eat meat but I can adapt any recipe. Thanks in advance.

    If you're looking for a vegetarian casserole, my basic version is to put a combination of any of the following in the slow cooker:

    aubergine
    courgette
    peppers
    mushrooms
    tomatoes (fresh or tinned)
    onion (softened in oil)
    garlic
    bayleaf/myrtle leaves
    pepper
    chillies
    tofu

    and leave overnight

    An alternative is a squash casserole, with onions, garlic, bayleaf, various types of squash chopped into 1" pieces, and some stock.

    You could also add lentils or pearl barley to either of these, and just make sure you have enough liquid to allow them to cook properly.

    I usually just use garlic ,onion ,tom puree ,good shake of mixed herbs and a couple of bayleaves and salt and pepper and stock as the basis for casseroles.

    But thats what I do! Except I use bouquet garni for bay leaves and herbs.

    I start with onion and garlic, then add whatever vegetables I've got. Carrots, chestnut mushrooms, celery, etc, then I add a tin or two of beans and chickpeas (drained and rinsed). Squirt of tomato puree, vegetable stock to cover, herbs and pepper.

    Sometimes I saute the veggies first.
