Eggs and apples???????

Been sorting out fridge and fruit bowl,got 7 eggs (11 days out of date,but that's ok) and 8 apples that nobody liked,skins are a bit wrinkled but otherwise ok, 
Has anyone got any ideas to use these up today been thinking all morning but brain just isn't doing it's job

We like Apple cake. I make a standard sponge mix and peel and cube/chop about 5-6 apples if using a 3 egg mix. Add the chopped apple to the mix after all the other ingredients are mixed and bung in the oven.
It's nice with cinnamon added and also cooks really well in the microwave. It doesn't seem to keep as long if you cook it in the microwave though but can be revived with a quick blast again and add custard or ice cream. Yummy.:smileyhea0 -

Was hoping for cakey thingy,by sponge mix do you mean 6oz each of flour,sugar,marg and 3 eggs.Or is that sponge without fat? Brain really is rubbish today LOLDebt at highest £102k :eek:

flan base, sliced apple with egg custard over the top then meringue over that?0 -
Yes, the sponge mix I make is 6oz flour, 6oz sugar,6 oz marg and 3 eggs. It's basically equal amounts for flour, sugar and fat and half the number of eggs so you can change the amounts if you want. I'm not brilliant at baking but this one seems to work for me.:smileyhea0

For the apples...boozy fruit.
Peel and core the apples, placing in a pyrex dish with some butter, alcohol (rum, brandy or whisky work well) and dark sugar (muscovado is good). Bake in oven for approx 45 minutes @ 160 deg C. Serve with greek yoghurt.Good, clean fun....MFW #11 2015 £7657 / £88800 -
I can't think of any goods recipes offhand, but do remember to check the eggs for freshness (immerse in water and discard any floaters).0

You could make apple clafoutis. If you search for clafoutis you get lots of cherry clafoutis recipes, but I have made it before with apples and it was good. Used some cinanamon in it as well.0

Yum,thanks,off to kitchen now to make the apple meringue pie and apple cake,just spoke to hubby and these were his choice,he also mentioned the rhubarb in the garden,but told him I think this is enough.
