Cheap meal ideas needed to feed 10 on holiday

I'm about to go on holiday with my family and have been given the task of cooking at least the first night and possibly another night or two. As we'll have only just arrived I need something fairly quick and that doesn't need too much equipment as I don't know what we'll have there. There are two vegis in the group and 10 people all together. Any suggestions? Thanks

Do the vegis eat fish? (I know some will).
If so do a tuna pasta type thing - use tin of cream of mushroom/celery soup as the sauce.
Or do a bean cassulet - one chopped onion fried, bit of garlic (I use puree) add three various tins of beans (kidney, borlotti etc), tin of chopped tomatoes (and I add bacon or smoked sausage but you can skip that) plus herbs and garlic bread will feed 3-4 people.working on clearing the clutterDo I want the stuff or the space?0 -
I would go for a simple tomato soup with either fresh or tinned
as much garlic and chili as you like, A touch of suger, salt and pepper and herbs.
You can of course add fresh or bottled peppers, sun dried toms etc so it can be made a rich or simple as you like
Served with some bread ?
flour,oil, yeast, salt and whatever you have (fried bacon would be nice or mushrooms etc)

I would make your mince/veg chilli/soup/chicken or sausage casserole up at home using your own kitchen then freeze it in bags or ice cream boxes. Take it with you in the car - assuming you're going by car of course and by the time you get there it will be defrosted enough to continue heating on the hob or in the oven if there is a suitable dish.
Tuna pasta or similar would be good for your second offering as you can assemble all the bits at home then you have it to hand whenever you are allocated your second meal.
If you can wangle it I'd consider making your second meal at home and freezing. Pack it in a cool bag to take with you and you can either transfer to freezer in your holiday house or put in the fridge where it will sit for a couple of days but you need to know that your second chef night will be near the beginning of teh week. The other advantage in this is that you have done your bit early on in the week and can sit easy for the rest of the week!0 -
Jacket spuds, with a selection of fillings, cheese, beans, tuna sweetcorn etc, maybe with a bit of salad on the side. Nice and easy, shove in the oven when you get there, make the fillings up, and then sit and relax. :T0

I always take my slow cooker then you can just put something in when u get up and sont need to worry about it for the rest of the day, chilli, spag bol, chicken curry, corned beef hash, sweet and sour, casserole then u can just cook the rice or pasta or potatoes when u get back0

a nice veggie chilli or curry would be great for the veggies. just a note vegetarians do not eat fish. people who eat fish but no meat are called pescatarians.Vegetarian's Do Not!!!! eat fish :mad:
