Hey fellow OS'ers.
As some of you already know I am currently pregnant and rather addicted to pickles etc. So I have several jars of leftover vinegar from pickled onions,gerkins and beetroot etc. I was wondering if I can reuse them to pickle some more things and how would I go about it???
I know Aldi have some cheap cucumbers at the mo, so could I buy a handfull, slice them up and bung them in my vinegar for a week or so and make pickled cucumber? Or is it more technical than that?

Not quite re-using vinegar, but a great recipe for veg growers with an abundance of cucumbers.
Bread and Butter pickle
5 Med cucumbers cut into 5 mm slices
350 gr onions sliced thinly
green pepper and red chilli sliced (optional)
50 gr salt
350 ml cider vinegar
350 gr sugar
2 level tblsp mustard seeds
2 level tblsp celery seeds
1/2 tsp tumeric
1/4 tsp cayenne pepper
Slice cucumber. onions. peppers and chilli. place in bowl and add salt.
Let mix stand for three hours.
Drain, rinse under cold tap.
Drain thoroughly.
Bring the remaining ingredients to boil and add veg.
Reduce heat, bring to simmer and cook 2 min
Place in hot jars, make sure liquid covers cucumbers, seal
I have just made a supply of this with 29p cucumbers from Aldi. Its delicious.

Unfortunately, I haven't got a recipe but apparently, you can pickle eggs using the vinegar from pickled beetroot, which turns them an interesting colour

I re-use the vinegar all the time!!! I make my own pickled eggs and onions, although they do take 4 weeks to be ready. I will have to try using the beetroot vinegar on the eggs - sounds interesting!! Thriftlady, how long does this keep and do you need to keep it in the fridge? I liked the bread and butter pickle idea until I saw that it had sugar in it. Could I leave it out, do you think?
Also, I've been searching for a cauliflower pickle recipe (without sugar). I buy loads of pickles at Christmas but it's really only the crunchy cauliflower that I'm after. Could anyone help please?0
