Left Over Veggies

Hello,
I have a cauliflower, broccoli and a leek left in my fridge. Both OH and myself are vegetarians. I'm not really sure what to do with them, I was thinking about doing some sort of bake with it with perhaps a breadcrumb/cheesy topping. Does anyone have any suggestions of what I could do with these please....??

    How about a cheese sauce to go over the cauliflower and broccoli, top with breadcrumbs and a little more cheese and bake in a hot oven?

    Leek and potato bake with a cheesy sauce.
    I have the mind of a criminal genius. I keep it in the freezer next to Mother....

    You could make them into a soup, or add some potato and make bubble and squeek!!!!
    I also like veg in a cheese sauce with pasta.

    Hi there,
    Thanks both for your suggestions, I like the idea of the cauliflower and broccoli bake, and as I'm a pig I'll do the potatoe and leek one too :) Ironic, I used to hate cheese when I was younger, now I'm older I can't get enough of it.
