Cooking bread from scratch

I know there is a thread about this but have searched and cant find it. Could someone point me in the right direction? One of my queries is can I mix strong flour with normal flour and if i want to use wholemeal is it ok to use wholemeal self raising flour? I made my first HM bread from a gluten free bread mix that was marked heavily down but to be honest I am going to keep that for pizza bases as its a bit too cakey for me.
Most of the threads I saw were for people who have a breadmaker and I know there is a thread about baking bread from scratch, I just cant find it:o

    I think you will have more success if you use strong flour (also called bread flour) as that is what is needed for breadmaking. Don't be put off by the 'for breadmakers' on the packet. It has been around a long long time before breadmakers were invented;)
