Zoe - good luck with the hospital. Re. the cakes (my PM box is getting full and I hate filing) this is a good explanation as to how to create, stack and ice a tiered cake. My tips would be:
Use an ordinary genoese/savoy sponge - this one looks too rich for children. I often make alternate layers of chocolate and vanilla which looks far more impressive than it is!
Make each cake 1" bigger than you need it, and have a template the right size to cut round to make it the size you want. This means any burnt or lumpy bits are cut off the sides. It also means you can make a round cake in a square tin if necessary.
Use a cake leveller rather than a bread knife to cut the layers (unless you have a really steady hand) and cut from the bottom - so set the leveller to 1" and cut a layer off the bottom. Take that away, and then cut another layer off the bottom. You may think you don't need to cut the last layer... but if you want the top to be straight, use the cake leveller again to make a final 1" layer. It's worth having an extra cake of each size in case they aren't quite tall enough to make your 3" cake.
I'd use raspberry jam, as strawberry tends to look grey when you cut it, and seedless if you're making it for children.
Ignore the apricot jam on the outside - just cover with a THIN layer of buttercream to create a barrier between the cake and the icing and help it to stick!
Make sure you have some kind of guides (possibly a couple of rulers of the same thickness) to help you roll your icing evenly. It should be about 3mm thick, otherwise it becomes unworkable.
If you want to cover the bottom board, do this AFTER you've put the cake on it and covered it, but before decorating. Roll out the icing you want to use, cut a hole the size of the cake, make a slit at what will be the back (position the cake towards the back of the board) and then wrap it round and smooth into place. Trim to the edge of the board.
Use 15mm ribon to cover the edge of the board and to put round the bottom of the cake so that the edge where the icing has been trimmed doesn't show!
This version uses a dummy for the top layers, but the principle is the same. Just make sure that the top layer is on a board the same size as the cake, and you cover the board as if it was part of the cake. You can then stack this on the dowels in the bottom layer, and put a ribbon round the bottom so the join doesn't show.
Once it's covered and stacked, you can then start decorating!
Oh yes - and clean up after each stage - nothing ruins icing like a few crumbs left over from the baking stage!

you spend half an hour looking at organisedhome.com printing off lists of things to do and pack......

Don't know that I'll be doing much in the way of flying( I did the bathroom last night) as I feel a bit spaced on these tablets and Piper has been up and down all night.
