Green Chillies

I hope this is the right place for this.

I have a collection of green chiilies (they look like jalapeno size) from our plant which I need to do something with. We're chilli addicts but even we can't get through this many before they go off.

I was thinking of making a relish or jam but don't have a clue where to start - the recipies I've seen are only for ones that last a couple of weeks - I'm thinking of something I can bung in jars that will last a while.

So - any recipies or ideas I mightn't have thought of?

    They freeze brilliantly! Then you have 'fresh' chillies all year round.

    Oh do they? What's the best way of doing it - bung them in a bag? Do they not collapse when you defrost them|?

    Thin skinned chillies can be strung (using fishing wire) and dried.

    Thick skinned chillies are best frozen.

    You can make chilli jam, I'll look for the recipe I used last year.

    Otherwise, I make a chilli relish from fresh chillies, ginger, garlic, lime/lemon juice and sugar. Chop chillies, ginger, garlic. Salt them and then spoon into a jar. cover with lime/lemon juice that you have sugared. About 2-3 teaspoon for 100ml (depends how sharp you like it, I like it mellow). Cover and keeps 3 months. (might keep longer but once I've made it, we eat it on everything and it doesn't last so long!)

    If they are still attached to the plant - I'm not entirely sure from your post - then you can just leave them there to ripen and use them gradually as you want, as red chillies. They'll be hotter though.

    I do not defrost them just use them straight from frozen during cooking sauces or curries. I would not use frozen chillies in something cold such as salad as they will collapse and go a bit slimy.
    I like to use lots of chillies during cooking and when I am in an asian shop I buy lots and freeze most of them to use in future.

    and yes just wash them and bung them in a bag and in freezer. They will be fine for months.

    I usually have loads of chillis in the freezer-as cheapsally says just slice straight from frozen (added benefit-tend to not get chilli oil on fingers leading to very sore eyes when remove contacts :eek::eek:)
    I think they are a little hotter after freezing-but that may be a figment of my imagination:o
