Evening all
I have a recipe that I want to try that uses a tin of condensed mediterranean tomato soup...trouble is all I can find is tomato soup, still condensed but not mediteranen
any suggestions on what to add to the normal soup to make it more mediterranean-y....??
I'm still learning this cooking from scratch lark...and quite getting into it...but lack confidence if i don't have the EXACT ingredient!
Thank you!

Basil and oregano are usually used in tomato based pasta and pizza sauces, so I'd add those if you have them.0

ooh I love tomatao & basil cuppa soup so that sounds good idea, will add to shopping list (cos I can see that pizza will become one to attempt in the near future)

Could you not make a simple tomato sauce with onions, tomatoes (fresh or tinned), real garlic, and herbs and a dash of olive oil ? Real ingredients are much nicer than tins of soup and cheaper too.
Heat the oil in a pan, add the onion and cook till soft over a medium heat. Add the other ingredients and cook slowly over a low heat until thick and tasty. I like to add a splash of wine to mine but that's entirely optional;) Season to taste.
While you are at it make lots and freeze in portions for other meals. Tomato sauce is very versatile.0 -
