If you have enough space for it in the freezer, then do it...see what it turns out like the next time you fancy having it for dinner. Have something else on standby tho, just incase!
I don't see why you couldn't freeze it...I freeze mac cheese all the time, but maybe the vegetable bits would go soggy on defrosting
Having said that, when I made mac cauliflower cheese for my baby (when weaning) and froze it, it always tasted ok when re cooked.

I would freeze it, the cheese sauce might go a bit watery when you defrost it, but it should taste fine!!!0
