I went to the greengrocers today to buy a red pepper. While I was there I noticed a pepper that was red and green. The greengrocer described this as turning from colour to colour. Can anyone please explain this to me and is it posible to turn a pepper from colour to colour as I only like red ones

I think I'm right in saying that the colour of a pepper depends on how ripe it is...that's why red ones taste sweeter than green ones.
