Fruit cake...

Can any one point me in the right direction to a recipe for a light fruitcake like Mr Kiplings country fruit cake. I have a cricket buffet to do and the guys love the stuff but I would have to buy about 10 of the real ones! Thanks in advance

not sure what's in a Mr Kipling one, as we are egg and dairy free, but I make a light fruit cake with apples and sultanas (plus cherries if you like them) that is moist and light - I can give the recipe if you wish?0

Hi BilberryCharlotte, love the name :-)
Moist fruit and apple cake
3 oz granulated sugar, 3 oz dairy free marg (or usual marg or butter I guess), cream together. Add 6 oz self-raising flour, and a few splashes of milk (we use soya) and mix until creamy (like mashed potatoes-type consistency) - then add a chopped cooking apple, a handful of sultanas, a few glace cherries if you wish. Sprinkle the top with a little more sugar if you wish, and bake in a 1 lb loaf tin, or an 8" square tin, for around 30 mins at 180 degrees.
I use the base of this recipe for most cakes - chocolate, choc chip, lemon, caraway seed, iced ginger and such - our usual weekly cakes.

Funny you should ask this as I was wondering exactly the same thing the other day, so I'm looking forward to seeing what recipes people suggest.0

Thanks Pauline, I am very partial to bilberry charlottes! Sadly, bilberries don`t grow round here, I will have to hie me back to the Peaks to pick some next year, until then I will have to find some bottled ones.

Hi, Yes, I should post it over there - I make all my baking vegan, as I have a vegan daughter, and my son is dairy and egg allergic. There isnt much I havent managed to bake vegan-style :-)0

forgot to say..............add half to one tsp of mixed spice if you like it a little more flavoursome - will try and edit my recipe
