Light Cream Sponge Recipe
Chell
It is my daughters first birthday on Friday and we are having family over for lunch. Rather than a traditional birthday cake I'd like to do a nice light sponge filled with strawberries (or other berries) and fresh cream.
Does anyone have a recipe please? I don't want a Victoria sandwich type recipe but something light like a gateaux.
Thanks,
Chell

Try this one. It's made using biscuit de savoie which is a light, delicate sponge. Make sure you follow the instruction about leaving the cake for 24 hours before splitting it otherwise it will tear, and if I were you I'd use a cake leveller rather than a knife unless you're VERY good at straight lines! If you have to use a knive, you need to make sure you have a large straight-bladed serrated knife (a bread knife might do at a push).0

Thank you both, I also found a swiss roll recipe. It isn't Birthday cake shaped but would be yummy.Nevermind the dog, beware of the kids!0

Good point. I did one last weekend for a two-year old's birthday! It's good for kids as its not too rich.0
